The Origin
“It didn’t begin with tequila. It began with time.”
Before Azul 78, there was a bond.
Two childhood friends met at five years old as neighbors during 1982, sharing a simple bond that quietly endured overtime.
They grew up together, later pursuing their own paths, both building successful careers as technology executives.
In 2011, their paths crossed again at a global company, where a professional connection evolved into a stronger friendship rooted in shared values, vision, and purpose.
The vision takes shape.
In 2019, on a Christmas evening in Puerto Vallarta, a simple gathering of friends conversation flowing alongside shared tequila sparked something more.
What began as reflection turned into VISION, guided not by trends, but by curiosity and respect, they recognized in agave an opportunity to create from the source crafting new experiences and building a family-driven venture grounded in quality and purpose.
They began in the fields.
No distillery. No production. Only agave… and time.
They planted and they waited. Season after season, they returned to the land, learning its rhythm and listening to its silence. The agave revealed itself over time, shaped by sun, soil, and patience; its character never rushed, only earned.
There was no urgency to produce, only a commitment to cultivate exceptional agave with the long-term vision of one day creating a tequila worthy of its origin.
Each precise cut of the “coa” removes the pencas (a leaf), ensuring that every piña the heart of the agave reaches the perfect size and maturity.
True tequila is not created. It is revealed.
2025
The moment arrives.
Azul 78 moved into production not as a starting point, but as a continuation of what already existed. Each step respects the agave’s maturity, its natural character, and a process focused on preserving rather than altering.
What results is more than a spirit, it is the expression of the land, the imprint of time, and the quiet discipline of patience.

Agave
Tequila’s agave takes root, grows and flourishes up to 8 years
Harvesting
Every sharp “coa” that cuts a penca (a leaf), ensuring that each “piña” (agave heart) that reaches our hands has the ideal size and maturity
Cooking
The aroma of cooked agave fills the air, in masonry ovens, time-honored methods and quality craftsmanship unite in a careful process. Each agave piña is slowly and deliberately steam-cooked, releasing a sweet essence known as mosto—the very soul of our tequilas
Milling
The ancient practice of extraction using a roller mill system, where the cooked agave is delicately shredded and pressed five times to ensure the complete extraction of its juice, the heart of our tequilas.
Fermentation
Fermentation awakens the magic. In this natural stage of the process, each nuance and aroma intertwine to create a unique experience in every sip. In stainless steel vats, the agave juices meet our endemic yeasts, unleashing a fascinating ritual of transformation
Distillation
This process is divided into two essential stages: Shattering, the first distillation, produces a liquid with 20% alcohol. And Rectification, where Tequila reaches its maximum purity and becomes Tequila Blanco, achieving an alcohol level close to 55%.
Aging
The aging time in barrels is crucial in defining the character of our tequilas. Each stage of aging adds its own depth and complexity to the final flavor.
Bottling
Bottling tequila marks the completion of a full cycle of invaluable tradition.
